Bologna

I don't know about you, but I personally love Bologna. It is a staple in my refridgerator. Plain, all beef, garlic, served hot or cold, it's all good. Although I realize that bologna may not be the healthiest meat around I still enjoy it. I think might be why I love Hot Dogs too as they are similar in taste and textures.

Growing up my mother would make bologna sandwiches (2 slices of bread, cream cheese and a slice of bologna) to pack in my school lunches. Always cut in half diagonally. Now my preferred bologna sandwich is 2 slices of bread, mayonnaise, provolone cheese, lettuce, tomato, onion, and bread & butter pickles. Also really good on hoagie rolls.

Aside from sandwiches, I also like to get slighlty thicker slices of bologna and cut them in quarters and put them on a Ritz type cracker with a ¼ slice of provolone cheese. Then 15 - 20 seconds in the microwave to bring out the flavors and you have a nice little snack in the afternoon.
As an alternative, you can add a small amout of marinara or pizza sauce to the cracker then use mozzarella cheese and a sprinkle of italian seasoning) instead of provolone along with the bologna for tiny pizza crackers.

► Eckrich garlic bologna. - This is my favorite, but it is impossible to find here in NC. It makes for a great fried bologna sandwich (with a slice of american cheese and an over easy egg, on a bagle).

► Boars Head. The brand I currently keep on hand all the time. Sliced a little thin. I frequently just roll up the slices and eat them by themselves, or rolled with a half slice of muenster or provolone cheese.

► Boars Head garlic bologna. The bologna I use for sandwiches. Goes well with provolone, american, or cream cheese. Fries up well for breakfast sandwiches, or works cold too.

► Dietz & Watson. D&W also has a very tasty bologna. It has a nice mouth feel and texture. Great for sandwiches.

► Oscar Mayer. An acceptable substitute for any of the above. Original | thick slice | extra thick slice.

Bologna to avoid.

Bar S - Not much flavor but what flavor it does have is unappealing. And it leaves a bitter after taste in my mouth that I just don't like.
