Ingredients:
6 hard cooked eggs [ How to Hard Cook an Egg ]
3 slices cooked bacon - crumbled
2 Tbsp yogurt
1 tsp dijon mustard
1/2 tsp lemon juice
1 tsp sweet pickle relish
1/2 tsp smoked paprika
1 Tbsp chopped chives
Directions:
Slice 6 hard cooked eggs lengthwise and remove egg yolks.
Mash egg yolks and fold in yogurt, mustard, lemon juice, relish and paprika. Salt & pepper to taste.
Spoon mixture evenly into the egg whites (or use a piping bag). Top with crumbled bacon and chives.
Makes 12 Servings
*** For something special - Before filling the egg whites, dip them in flour, then whisked eggs, then panko crumbs/grated parmesan cheese and fry till golden brown. Then add the yolk mixture.
